"Pumpkin Oat Bars" |
- 1 tbsp Olive Oil
- 5 medium Sweet Potatoes (I used 3 cans of pumpkin because I did NOT want to cook sweet potatoes)
- 4 cups Quick Cooking Oats
- 3/4 cup Skim Milk
- 1 tbsp Lemon Juice (in the skim milk for 3 minutes to sour it)
- 1/4 cup Flax Seed
- 1/2 cup natural maple syrup (or sugar free syrup of your choice)
- 2 tbsp Pumpkin Pie Spice
- 2 tbsp coconut butter (I used regular butter... Same calories, and I could not find coconut butter)
- 1/2 cup dried cherries/raisins
- 1/2 cup Raw Almonds
Since I did not have to cook the potatoes, I just combined all the ingredients, poured into a 13x9 pan (coated in olive oil) and baked for 50 minutes at 350 degrees. I think mine were "moister" (is that a word???) then their recipe because the recipe said to only cook it for 30 minutes... But that was not an option. It was a huge pan of pumpkin oatmeal at that point.... Which actually would be really good if that was what I was going for! My class really enjoyed them yesterday. I liked them, but I think I would add more trail mix or something... Maybe put peanut butter on top if I needed something more substantial. BUT VERY GOOD.
Well, I am off to work. My hair appointment is tonight, so that is always a "plus" at the end of your week. I have a ton of homework to do this weekend, a long run to get in tomorrow, and I have to start packing for our little vaca next week!!! I am so excited to have a few days off with the hubs. ReplyDeletesecondly, that recipe sounds scrumptious! thanks for sharing it. i don't think i would have thought to sub in pumpkin...i would have been cursing the fact that i had to cook the sweet potatoes.
